How to make no-bake Oreo cheesecake cups
1. Make the Oreo crust
Pulse 16 Oreos in a food processor, or bag them and crush with a rolling pin, until you have mostly fine crumbs with a few specks. Stir in the melted butter until the mix looks like wet sand. Spoon about 2 tablespoons into each jar and press lightly — do not pack it into concrete. A loose crust spoons better.
2. Beat the cheesecake base
Beat the cream cheese alone for a full minute until it is completely smooth. Add powdered sugar and vanilla and beat again. Scrape the bowl. Any lump you leave now will still be there when you serve.
3. Fold in whipped cream and cookie chunks
In a clean cold bowl, whip 1 cup heavy cream to stiff peaks. Fold it into the cream cheese in two additions with a spatula. Stop when you do not see white streaks. Coarsely crush 8 Oreos — you want chunks, not dust — and fold most of them through the filling. Save a handful for the tops.
4. Layer the jars
