How to make herb and garlic swirl rolls
1. Make a soft dough and let it rise
Stir yeast into the warm milk with a pinch of the sugar. When it looks creamy, mix in remaining sugar, butter, egg, flour, and salt. Knead 8 minutes until the dough is smooth and slightly tacky. Cover and let it double, 60 to 75 minutes.
2. Beat the garlic herb butter
Beat the softened butter with minced garlic, parsley, Parmesan, pepper, and Italian seasoning until it looks like a spreadable paste. Melted butter here is a mistake — it runs to the edges and you lose the spiral.
3. Roll, spread, and swirl
Punch down the dough and roll it into a 12×18-inch rectangle. Spread the garlic butter almost to the edges, leaving a ½-inch strip on the far long side. Starting from the long side, roll into a tight log. Slice into 12 rolls with unflavored dental floss or a sharp serrated knife.
Nestle them in a buttered 9×13-inch pan. Cover and let them puff until they are touching and feel soft, 30 to 40 minutes. Overnight option: cover and refrigerate after shaping. In the morning, sit 45 minutes at room temperature, then bake.
4. Bake until golden, then brush again
Bake at 350°F (175°C) for 22 to 28 minutes, until the tops are deep gold and the center roll is cooked through. If they brown too fast, tent with foil for the last 8 minutes.
