Classic tiramisu went to the berry patch. This strawberry tiramisu skips the espresso and the oven. You dip ladyfingers in strawberry puree, stack them with a cloud of mascarpone cream and fresh sliced berries, then dust the top with cocoa. Assemble it in 20 minutes. The fridge does the rest.
It is light, creamy, and loud with fresh strawberry flavor — the dessert you make when it is too hot to bake and you still want something that looks like you tried. Make it in the morning. Serve it after dinner. Overnight is even better.
Why this no-bake strawberry tiramisu works
- Mascarpone + whipped cream stays fluffy instead of dense like cheesecake.
- A quick dip, not a soak, keeps ladyfingers soft but not soggy.
- Fresh slices plus puree give you juice in the layers and fruit in every bite.
- Cocoa on top is the classic tiramisu signal — it also balances the sweetness.
Ingredients (serves 8)
Use ripe, fragrant strawberries. Pale winter berries need the extra 2 tablespoons of sugar. Savoiardi ladyfingers (the dry Italian ones) hold up better than the soft sponge-cake style. Mascarpone should be cold but stirrable — if it is rock hard, let it sit 10 minutes, not an hour, or it will go grainy when you fold.
- 2 cups fresh strawberries, sliced
- 1 cup strawberry puree
- 2 tbsp sugar
- 1½ cups heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 250 g mascarpone cheese
- 24 ladyfinger cookies
- ¼ cup milk
- Cocoa powder, for dusting
To make the puree, blend about 1½ cups chopped strawberries until smooth. Strain if you hate seeds.

How to make strawberry tiramisu
1. Mix the strawberries
Stir the sliced strawberries with the puree and 2 tablespoons sugar. Set aside 10 minutes so the berries release juice. Scoop about ¾ cup of the liquid puree into a shallow dish and stir in the milk — that is your dipping bath. Leave the sliced fruit in the remaining puree for the layers.
2. Whip the cream, then fold the mascarpone
Beat cold heavy cream, powdered sugar, and vanilla to stiff peaks. The cream should stand up when you lift the beaters.
Add the mascarpone and fold with a spatula until the filling is smooth and creamy. No streaks of cheese, no soup. If the mascarpone is lumpy, mash it with a spoon first, then fold.
3. Dip the ladyfingers — quickly
One-second dip per side. In and out. A long soak turns the cookies to mush and the dish to soup. Line them in a single layer in an 8×8-inch dish or a similar glass pan (the glass is what makes those viral layer photos).
4. Layer cream, berries, repeat, then cocoa
Spread half the mascarpone cream over the first ladyfinger layer. Spoon on half the sliced strawberries. Repeat: dipped ladyfingers, remaining cream, remaining berries. Smooth the top. Dust generously with cocoa. Crown with extra strawberry halves and a mint leaf if you want the pin look.
Chill at least 4 hours. Overnight is the real recipe. The cookies soften into cake, the cream sets, and the strawberry flavor moves through every layer.
Make-ahead and storage
This is a make-ahead dessert on purpose. Cover and refrigerate up to 2 days. Do not freeze — mascarpone weeps when it thaws. Dust cocoa just before serving if you want it extra dark; it fades a little in the fridge.
Easy variations
Swap half the strawberries for raspberries. Add 1 teaspoon lemon zest to the cream. For a grown-up version, replace 2 tablespoons of the milk with strawberry liqueur or a splash of white rum. Individual cups work if you snap the ladyfingers to fit.
FAQ
Can I use cream cheese instead of mascarpone?
In a pinch, beat 200 g cream cheese with 2 extra tablespoons cream until smooth. The flavor is tangier, not the same.
Why is my tiramisu watery?
You soaked the ladyfingers. Dip for one second. Also drain very juicy berries before you layer them.
Do I have to use cocoa?
No, but it is what makes it taste like tiramisu instead of a strawberry trifle. White chocolate shavings are a pretty swap.
Can I make it the same day?
Yes, if you can give it 4 hours. Overnight is still the better texture.
