Crispy Chicken Caesar Sandwich

Crispy chicken + Caesar salad + toasted bread. That is the whole sandwich.

This is a Caesar salad you can hold. You fry a thin chicken cutlet until it is gold. You toss lettuce in creamy dressing. You put both inside a toasted baguette with extra Parmesan.

The steps are simple. Mix sauce. Coat chicken. Fry. Toast bread. Stack and eat.

What you need

Romaine lettuce

Romaine lettuce — crunchy leaves for the salad.

French baguette

Baguette — or any crusty roll.

Parmesan cheese

Parmesan — for the dressing and the top.

Garlic
Lemon

Garlic and lemon — the Caesar taste.

Dressing

  • 1/2 cup mayonnaise
  • 3 tablespoons Greek yogurt (or more mayo)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons lemon juice
  • 1/4 cup grated Parmesan
  • 1–2 garlic cloves, minced
  • Pinch of salt and black pepper

Chicken

  • 4 thin chicken cutlets
  • 1/3 cup flour + 1/2 teaspoon salt + 1/2 teaspoon smoked paprika
  • 2 eggs + pinch of salt
  • 3/4 cup panko + 1/4 cup breadcrumbs
  • 1 teaspoon garlic powder, 1/2 teaspoon oregano, 1 teaspoon dried parsley
  • 1/4 cup grated Parmesan
  • Oil for frying

To build

  • 2 romaine hearts, chopped
  • 1–2 baguettes (or 4 rolls)
  • Extra Parmesan
  • A little butter for toasting

Step 1 — Mix the Caesar dressing

Put mayo, yogurt, mustard, Worcestershire, lemon juice, Parmesan, garlic, salt, and pepper in a bowl. Mix until creamy.

Taste it. Want more lemon? Add a squeeze. Want more cheese? Add a spoon of Parmesan.

Put 4–5 tablespoons of dressing on the chopped lettuce. Mix. Put the salad and extra dressing in the fridge.

Done when: the lettuce is shiny but not swimming in sauce.

Step 2 — Set up 3 bowls

This is how the chicken gets crispy. Three plates:

Bowl 1
Flour + salt + paprika
Bowl 2
Eggs mixed with a little salt
Bowl 3
Panko + crumbs + herbs + Parmesan
Flour for coating the chicken
Eggs for the egg wash

Flour first. Egg second. Crumbs last. That is the order.

Step 3 — Coat the chicken

Pat the chicken dry. Sprinkle salt and pepper.

Dip each piece: flour → egg → crumbs. Press the crumbs on so they stick. Set on a plate.

Step 4 — Fry until gold

Heat about 1/2 inch of oil in a pan on medium. When a crumb sizzles, the oil is ready.

Fry 2 pieces at a time. About 3–4 minutes each side. Do not crowd the pan.

Put the chicken on a rack or paper towel. It should be gold and crispy.

Done when: deep gold outside. No pink inside (165°F if you check).

Step 5 — Toast the bread

Cut the baguette into sandwich pieces. Open them. Butter the inside. Toast in a dry pan until the cut side is gold.

Why: toast keeps the bread from going soggy.

Step 6 — Build the sandwich

Do it in this order so it stays crispy:

A. Spread dressing on the bottom breadB. Add the hot crispy chicken
C. Pile on Caesar lettuceD. Extra Parmesan. Close the bread.

If something is wrong

Coating falls off? Dry the chicken first. Press the crumbs on hard.

Chicken pale, not crispy? Oil was too cool. Wait until a crumb sizzles.

Salad wet? Dry the lettuce well. Use less dressing.

Bread soggy? Toast it. Eat right away.
